This is one of my personal favorites. Mung beans are packed with tons of protein to help you sustain energy throughout the day. If you have extra time and want a few added health benefits, sprout the beans in a sprouting machine or by soaking them overnight.
Serving: 2 1/2 cups
What you need:
3 1/2 cups of Water
3/4 cup of Mung Beans
1 Tablespoon of Ginger
1 Teaspoon of Cinnamon
Suggested Toppings:
Tablespoon of Coconut Oil
Tablespoon of Maple Syrup
Sprinkle of raisins
Sprinkle of Goji Berries
Get to it:
1. Bring water to a boil and add ginger, cinnamon and Mung Beans
3. Reduce heat to low/medium and cook semi-covered for 30 mins. If the beans are sprouted, cook for 15 minutes, or until most of the water is soaked up.
4. Serve and top with any or all of the following: Coconut Oil, Maple Syrup, Pear, Raisins, and Goji Berries.
Monk Tip: You want to watch the beans the last 5-10 minutes as to not overcook them. Enjoy.
