Don’t let the “raw” part steer you away. This dish is delicious and if it weren’t served cold you would have no idea it’s raw.
Oats are an excellent source of iron, fiber, and vitamin B. For this recipe I use old fashion steel cut oats, but you can use rolled oats as well.
Serving: Almost 4 cups or two hungry people
What you need:
2 cups of steel cut oats
1 1/2 cups of nut milk
1/4 cup of chia seeds
1 red apple
1 cucumber
1 banana
Maple syrup to your liking
Get to it:
- Add oats, milk, and chia seeds to a bowl and mix
- Let the oat mixture sit for approximately 5 minutes to allow the milk to absorb and the chia seeds to cluster
- After 5 minutes stir the oats again to break up the chia seeds
- Add chopped apple and chopped cucumber to oats and let sit over night in the fridge
- Before eating drizzle maple syrup or agave to your liking with slices of banana
- Enjoy
Monk Tip: You can also replace the milk with water. If using water, follow the above measurements and add one cup of almond pulp during step one.

This was DELICIOUS and so easy to make. I was a little nervous with oats only soaked being a cooked oatmeal fan–however it was a great treat. I felt so much energy for the morning which was really great. This will definitely become a regular in my mornings.
