Make this if you can find truly pasture raised eggs. If not, go the vegan route.
For my vegan friends: Use tofu or very soft tempeh and crumble it in your hands then follow the rest of the instructions.
What you need:
– ¼ cup of Vegenaise
– 3 tbls of Green onions
– 2 tbls of Cilantro
– 2 tbls of Nutritional yeast
– 1 tbls of Dijon mustard
– ½ teaspoon of curry powder
– Pinch of salt
– ½ a vine ripe Tomato chopped
– Arugula
– Sprouted Whole Wheat Wraps (read the ingredients, if you can’t pronounce it, don’t buy it).
Get to it:
- Cook whole eggs for 9 minutes in boiling water. Once completed, drain and rinse in cold water, crack open, and peel the shell.
- Add eggs, vegenaise, green onions, cilantro, nutritional yeast, Dijon mustard, curry powder and salt in a bowl. Mash and mix eggs and ingredients.
- Scoop egg mixture onto a wrap, add tomato and argula.
- Wrap and package.

I made the vegan version with tofu–so delicious! Thank you for the tip to toast the bread to prevent it from being soggy. I have a VERY picky boyfriend who would definitely complain about soggy bread if I did not toast it. Thanks Modern Monk Victoria!
Thank you Meghan. Glad you like it the vegan way.
