Strawberries & Cream Raw Ice Cream

vegan desserts - vegan ice cream

Remember when your parents use to take you to get ice cream when you were good? Now it is time to treat yourself for just being you! Relish over this classic favorite dessert without ever worrying about the big C hitting your thighs. Embrace yourself for a raw and vegan ice cream! It is so incredibly delicious without the bloated tired feeling ice cream gives you. Oh, and it is super easy to make!

Serving: 6 cups

What you need:

2 Sliced spotted bananas

2 Cups of  strawberries cut in quarters

1 large avocado or 2 small avocados pitted and chopped

8  pitted and chopped dates

1/2 cup of coconut water

1/4 cup of maple syrup

Get to it:

Prepare

  1. Add the bananas, strawberries, and avocado in a sealed glass container and place in freezer over night (or until frozen).
  2. In a small bowl, soak dates in coconut water over night or for about 4 hours.

Blend

  1. Add frozen fruit to a high speed blender along with the dates in coconut water (include the Coco H2O in the blender).
  2. Begin to blend ingredients on medium to high speed.
  3. Add maple syrup and splashes of coconut water while blending until you have a nice creamy consistency.
  4. Pour mixture in a sealed glass container and freeze.

Freeze and Serve

  1. After about 4-6 hours your ice cream with be frozen and ready to enjoy.

Monk Tip: You can have lots of fun with this vegan dessert and add any fruit you love. Avocados and bananas will be your base, they put the “cream” in ice cream. When the fruits are frozen, you will need to let them defrost for a few minutes to get them in the blender easily. I also love to soak my dates with fresh squeezed orange juice. This is one of the freshest forms of ice cream so you won’t want to keep it longer than 5 days.

OMG soooo good. I used unsweetened coconut milk instead of water for the big kid living in my house. IT WAS TO DIE FOR! I was having a sweet tooth, yet didn’t want all the processed things and sugars crap and this hit the spot.
